I have been working on cooking from scratch for my family these past couple months. After many raving reviews about how good fresh pumpkin is, I decided to give it a try. They smelled very good while they were cooking. I as able to get about 8 cups of fresh pumpkin. I froze 2 cups per freezer bag to use in the future.
First I oiled the pumpkins with coconut oil. |
Next I cooked them until I could pierce them with a knife easily. |
I then cleaned out the seeds and slimy strings. |
Then I pureed the flesh. (Note to self, I need a bigger food processor) |
